Spicy grilled tomato-Parmesan sandwich

This is a simple sandwich that hits the spot. It is a variation of the traditional French Pissaladière, and a wonderful alternative.

The sandwich is simple but pops with flavour. The quick roasted tomatoes are warmed through and coated in sizzling Parmesan. The base is toasted baguette, garlic and hot sauce that perk up the dish. I love making this as a quick bite midday when I feel like a snack, but also for a light lunch.

This is one of the first cookbooks I purchased over 27 years ago. I got it to learn how to cook because it has many global cuisines that pop with spice. All the vegetarian recipes are easy to make and have always turned out delicious, though, on a few occasions, I have had to turn down the heat a notch or two. Jennifer is a well-published cookbook author with 11 books, and Jump Up and Kiss Me, a brand of natural spicy foods, is fantastic. This is a cookbook I need to pull out more often.

Ingredients:

1 baguette

OLive oil

1-2 cloves garlic

Cherry tomatoes, halved, or tomatoes sliced

Hot sauce, Cholula, Tabasco, or your choice of sauce

Parmesan cheese, grated

Pepper


Heat a broiler with a rack about 8 inches from the top.


Cut the baguette into 6-inch pieces. Half the pieces longitudinally. Lay them cut side up on a lined baking sheet. Drizzle with olive oil.


Broil for 1-2 minutes until the tops are toasted. Remove and rub the cloves of garlic onto the crisp surface, rubbing them into the bread. Make it as garlicky as you would like.


Top with a generous sprinkling of hot sauce of your choice. Top with tomatoes, Parmesan cheese and pepper.


Broil for another 1-2 minutes, until the cheese has melted and starts to caramelise. Serve immediately while the cheese is melted.
