Curried apple sauce and ricotta canapé

Canapés are the perfect finger food. Delicate, always delicious and has countless variations.
This version is absolutely a treat, sweet and spicy curried apple sauce and creamy ricotta layered on a crusty baguette.
This is my favourite canapé book; it is a small, beautiful cookbook filled with wonderful recipes from a chef who understands the art of composing these perfect bites. The recipes are quite simple but always pop with flavour, and the photographs are stunning (trying to get there myself). If there is one canapé book on your shelf, this should be it.

Ingredients:
1 apple, diced into small cubes
1 tomato, finely diced
1 teaspoon curry powder
1 tablespoon honey
Salt and pepper to taste
1/4-1/2 teaspoon chilli powder (optional)
100 g ricotta cheese, whole milk preferred
1 baguette
Add the apple, tomatoes, curry powder, honey, salt, pepper, and chilli powder (if using) to a small pot and cook over medium heat for 10 minutes, until the tomatoes are broken down and an apple sauce forms. The apples will still be whole pieces; that is how you want them to be. Taste and adjust for spice, salt and sweetness. Let cool completely.
Cut the baguette into thin diagonal slices. Layer with the ricotta cheese, then the applesauce, or flip the order around.
Serve immediately.
