Smoked chicken, guacamole, and tomato

Sometimes flavours come together beautifully. The ingredients naturally compliment each other and the dish is both satisfying and delicious. This is one of those dishes.

The bread is loaded with rich and creamy guacamole at the base that is topped with spicy smoked chicken breast and followed by a fresh pop of cherry tomatoes. You can make the guacamole as described below or use any good-ready guacamole. The smoked chicken breast is from Smoked by Dianora, juicy and loaded with spice and flavour. The cherry tomatoes add a lovely freshness. This is a canape that can easily become dinner.

This is my favourite canapé book, it is a small beautiful cookbook filled with wonderful recipes from a chef who understands the art of composing these perfect bites. The recipes are quite simple but always pop with flavour and the photographs are stunning (trying to get there myself). If there is one canapé book on your shelf, this should be it.

Ingredients:

2 smoked chicken breasts, sliced, or about 12 slices

3-4 scallions, minced

1 tablespoon cilantro, minced

1 avocado, scooped out

Salt, to taste

Juice of 1/2-1 lime

Country bread, sliced and toasted if desired

Cherry tomatoes, halved


Start by making the guacamole by mixing the scallions, cilantro, avocado, salt and lime juice. Work with a fork into a chunky mix. Taste for salt.


To a slice of bread add a generous layer of the guacamole. Top with the smoked chicken slices. Top with the cherry tomatoes.


Serve immediately.
