Red cabbage, apple, and walnut salad

This is a simple summer salad with a few flavours, such as bitter, sweet, and spicy. It is stunning and a crowd-pleaser on the table.

This is mainly an assembly job of the ingredients, so it is a simple salad to make during the summer months. The bitterness from the red cabbage, or more traditionally radicchio, is balanced by the sweet-spicy dressing with mustard. The apple is also crisp and lovely, and the walnuts add nuttiness. This is a salad I loved.

This is a beautiful cookbook about a Danish chef introducing us to the country's old and modern dishes. Filled with beautiful photographs and recipes, it is a lovely addition to my library.

Ingredients:

For the salad:

1 small head of red cabbage, quartered and thinly sliced

2 red apples, cored and thinly sliced

1/2 cup walnuts

Large grain sea salt to garnish


For the dressing:

1 tablespoon Dijon mustard

1 tablespoon honey

3 tablespoons apple cider vinegar

2 tablespoons walnut or olive oil

1/2 teaspoon salt

1/2 teaspoon pepper


Mix all the ingredients for the dressing well. Taste for spice from the mustard and adjust. The salt should be less as you will aslo garnish at the table.


Mix the cabbage, apples and walnuts well. When ready to serve, add the dressing and toss well. garnish with salt, and serve.
