Ingredients:
1 ball of mozzarella
30 baby spinach leaves
Olive oil drizzle
Thyme, to sprinkle
Salt, to taste
Pepper to sprinkle
Sourdough or multigrain bread toasted
Heat an oven to 375° F with a rack in the middle.
Load the toast with alternate slices of mozzarella and 2-3 spinach leaves per section. Sprinkle with thyme, pepper and salt.
Bake the toast for 5-7 minutes until the cheese is melted. Drizzle with a few drops of olive oil and serve immediately.
