Everyone loves guacamole, but there is guacamole that is delicious and the bland crap you get almost everywhere else. This recipe takes guacamole over the top, and yes it is super simple to make! Serve this guacamole as a dip with tortilla chips or part of a larger meal with tacos.

Ingredients:
1/4 large white onion, diced fine
2 tablespoons spring onions, diced fine
2 tablespoons lime juice
4-5 avocados, pitted and roughly mashed leaving a chunky mush
1 jalapeño, finely diced, or to taste
2 tablespoons fresh cilantro, minced + more for topping
2 small tomatillos, minced
Salt to taste
2 teaspoons olive oil
Mix all the ingredients in a bowl and taste for salt, lime and spice. The guacamole should be creamy with a well-balanced tart-spicy finish. Top with the minced cilantro and serve immediately.
