Canapés are the perfect finger food. Delicate, always delicious and has countless variations.
This version is absolutely a treat, sweet and spicy curried apple sauce and creamy ricotta layered on a crusty baguette.

I bought it for appetizers when we entertain, and I have impressed my guests with the wonderful canapés. Most recipes, like this one, are super simple and very delish.

Ingredients:
1 apple, diced into small cubes
1 tomato finely diced
1 teaspoon curry powder
1 tablespoon honey
Salt and pepper to taste
1/4-1/2 teaspoon chilli powder (optional)
100 gm ricotta cheese, whole milk preferred
1 baguette
Add the apple, tomatoes, curry powder, honey, salt, pepper and chilli powder (if using) to a small pot and cook on medium heat for 10 minutes till the tomatoes are broken down and an apple sauce is formed about 10 minutes. The apples will still be whole pieces, that is how you want it to be. Taste and adjust for spice, salt and sweetness. Let cool completely.
Cut the baguette into thin slices on the diagonal. Layer with the ricotta cheese and then the apple sauce, or flip the order around.
Serve immediately.
