Caramelized cauliflower with mint, pine nuts, lime, and yogurt

3 tablespoons yogurt

1-2 teaspoons honey

1-2 teaspoons lime juice

Salt to taste

Mix together well. The sauce should be sweet sour.

Set aside.

2-3 tablespoons nuts, pine nuts or almonds.

Toast on a pan till golden, set aside.

1 cauliflower head, cut into bite-sized chunks

1-2 garlic, minced

1-2 shallots, minced

1 teaspoon chives, minced (optional; if no chives, add some more shallots)

Zest from 1 large lemon

1 teaspoon chilli flakes

2 tablespoons EACH basil, cilantro, mint, minced

Lime juice

Add oil to a pan and saute cauliflower until browned all over. It is okay if it is a bit raw. Set aside. Alternatively, I broil them in the oven with a spray of oil, salt, and pepper.

Add a touch of oil, garlic, chilli flakes, and shallots, and cook on medium until the onions are just turning golden. Add the lemon zest and chives and sauté for 1 minute. Add ten fried cauliflower, fresh herbs, and lime juice, and toss well. Top with yen yoghurt sauce.

Enjoy with pita bread or naan bread.
