Updated: Apr 24, 2021

A wonder side for any meal. The cauliflower explodes with flavors. This is one of my favorite cookbooks. The recipes from here are unique, packed with flavor and explore the flavors of the world. For more recipes from this cookbook click here.

3 tablespoons yogurt

1-2 teaspoons honey

1-2 teaspoons lime juice

Salt to taste

Mix together well. The sauce should be sweet sour.

Set aside.

2-3 tablespoons nuts, pine nuts or almonds.

Toast on a pan till golden, set aside.

1 cauliflower head, cut into bite sized chunks

1-2 garlic, minced

1-2 shallots, minced

1 teaspoon chives, minced (optional, if no chives, add some more shallots)

Zest from 1 large lemon

1 teaspoon chili flakes

2 tablespoons EACH basil, cilantro, mint, minced

Lime juice

Add oil to a pan and saute cauliflower till browned all over. It is ok if they are a bit raw. Set aside. Alternatively, I broil them in the oven with a spray of oil, salt and pepper.

Add a touch of oil and add garlic, chili flakes and shallots and cook on medium till the onions are just turning golden. Add the lemon zest, chives and sauté for 1 minute. Add ten fried cauliflower and fresh herbs and lime juice and toss well. Top with yen yogurt sauce.

Enjoy with pita bread or naan bread.
