I love this salad. It is absolutely stunning to present, super easy to make and always a hit. It is perfect for any summer BBQ.

Ingredients:
Watermelon, cut into bite sized squares
Honeydew melon (or Cantaloupe, or Tuscan melon or Frog melon, or any melon of your choice), cut into bite sized squares
Cucumbers, cut into bite sized squares
Avocados, cut into bite sized squares
Heirloom tomatoes, cut into bite sized squares
Feta cheese, preferably the good French or Bulgarian feta, cut into bite sized squares
Basil leaves, shredded by hand
1 -2 teaspoons fennel seed, roasted and barely crushed in a mortar. Alternatively, use fennel pollen.
EVOO
Aged balsamic vinegar, preferably from Moderna
Large grain sea salt
Olives, oil cured or brined, optional
Arrange the fruit and vegetables in a random pattern on a large platter. Sprinkle the fennel seed on the salad, toss on the torn basil and drizzle the EVOO and aged balsamic vinegar.
Serve.
