Indian-style grilled corn

I grew up in Mumbai eating corn grilled this way. We would wait for the cart to come by in the evening, run up to him screaming and wait in line for this freshly grilled treat.

A few good restaurants are now serving their corn with flavoured kinds of butter, spices and herbs, goodbye boring buttered boiled corn. But this is the best recipe ever! It is super simple and super good. The combination of sweet (corn), spicy (chilli), sour (lime juice) and salt together is wonderful.

Ingredients:

Corn on the cob, shucked

2 teaspoons salt

1/2-1 teaspoon ground cayenne pepper or chile powder

Limes, cut into wedges


Grill the corn till the corn char. I do this on a flaming charcoal grill, but you can do this on a gas grill too, with the heat turned up as high as it will go. The corn kernels need to be evenly charred and burnt in spots.


Mix the salt and chile powder. pick up a lime wedge and dip it into the chile powder-salt mix and spread over the corn kernels slowly squeezing the lime to squeeze the juice out.
